Vegan MoFo day 26 - It's cold and rainy so I made mousse

I'm treating today's MoFo  - It's cold and rainy and there’s a snow drift outside your door! What are you going to make using the ingredients you have? - literally. Not the snow drift, the making a dish with only what I have in my kitchen.

Thanks to some recent cake making, I had half a carton of silken tofu lying around. I also dug out the half jar of Vegan White from the back of the cupboard, along with some frozen cherries from the freezer, and some dark chocolate. There's always dark chocolate in the house somewhere.

My first thought was to use all this bounty to make a black forest mousse, and for something scratched up from little bits of leftovers, it was pretty darn good. What's even better is that it takes not very long to throw together and looks anything but.


Black Forest mousse cup

Ingredients
250g punnet of cherries, cut in half stones removed
Sugar
190g silken tofu
30g vegan white chocolate
30g vegan dark chocolate

How you do it
Put the cherries in a pan over a low to medium heat with a splash of water and a teaspoon of sugar. Cook for 10 minutes or so, or until the juice has started to come out and form a sauce.
Divide the silken tofu into two portions.
Put the white chocolate over a double boiler until melted. Add a teaspoon to a tablespoon of sugar, depending on how sweet your tooth is.
Once it's all melted together, pour the white chocolate into the tofu and blend until you've got a mousse. Put to one side.
Now do the same with the dark chocolate: melt over a double boiler, add sugar, and blend with the other half of the silken tofu.
Divide the warm cherries between two glasses.
Layer over white and dark chocolate mousses, and top with some more melted dark chocolate, if you've any spare.

  5. Yum! I'm the same - there is always chocolate somewhere to be found. I would like to give this a go - I remember when first going vegan I tried a silken tofu mousse, and I remember how tofu-y it tasted, I was so turned off. My tastes have changed and I've learned more about how to use ingredients (there's a good chance I used the incorrect tofu, ha!) so it's probably time to try again.

  6. yes, there must always be chocolate. I may not have all my flashlights and candles and emergency drinking water ready for the next big natural disaster, but I will have my chocolate rations at the ready. I always seem to end up with half a carton of silken tofu and I never know what to do with it. I almost feel like it should be against the law to have recipes that call for less than the entire carton.
