A vegan full English breakfast: Vegan MoFo

When I uncloaked my plans for my Vegan MoFo theme and said I was planning on cooking just English dishes, I asked for suggestions of what I should cook. Cadry of Cadry's Kitchen put in a shout for a full English breakfast.

Holy cow - how had I not thought of that? I mean, it's so English, it's got English in its name. It couldn't be more English if it was called the English Blighty Albion breakfast.

So, the full English - it's normally a total hymn to meat and all things non-vegan. Sure there are few things that a vegan can eat - fried mushrooms and tomatoes, beans - but most of the ingredients are sadly animal - eggs, sausages and bacon.

But as vegans know, there's very little that can't be veganised, and be darn tasty to boot.  Behold, the vegan full English:

It's everything a full English needs, just with vegan versions: Redwood bacon (not a huge fan to be honest, but it's if you're making a full English, there has to be bacon-esque stuff), Linda McCartney sausages, grilled tomatoes, fried mushrooms, baked beans and scrambled tofu.

Scholars of the full English will probably tell you that it needs fried bread, and my other half will tell you that there should be some potato element involved, but if you reckon you need more food than is on that plate, you're insane, or a ruminant with a spare stomach.

There's only one thing missing from that fry-up if you ask me - a big mug of tea. What could be more English than that?!

  4. looks delicious - I love tatty scones with my fry up because I have spent too much time in Scotland and I love some greens because I eat too many trendy fry ups in Melbourne - but I would love to wake to that breakfast

  5. Looks great, but I have to say I agree with your partner about potatoes - hash browns or tattie scones are an essential element of a cooked breakfast for me! Your scrambled tofu looks amazing - did you use any particular recipe for it?

  7. What a perfect suggestion from Cadry! I wish I could tuck into this right now, it's been ages since I've done a big weekend fry-up like this. I can take or leave potatoes with these sorts of breakfasts but I do love them with a pile of spinach.

  11. That looks GOOD! So, are all of the Linda McCartney products vegan? I haven't seen them in the USA and I'll never understand why Paul doesn't just go vegan already! PS a potato and bread couldn't hurt ;-) #carbstrong

  13. I would happily scrap off all those vile mushrooms and replace them with potatoes. That looks so good, now I totally want a big ass breakfast plate!

  14. oh my gosh, this looks so great. I am catching up on mofos at 12:30 at night and now suddenly I am dying for a giant plate of English breakfast! ha ha. We went to England when I was 12, and we stayed in B&B's mostly. I have very fond memories of the breakfasts we had there! The tomatoes seem so odd, because where do they even find tomatoes in England? Still, I love the whole thing and it looks amazing.

  17. I like to embrace veganism in cooking, and make things that are vegan in their own right rather than using fake meat things. For something smokey, you could use smoked aubergine slices or "coconut bacon". There are various recipes for these on the web. For something eggy, you could cook ackee or avocado in a way that makes it taste sulphurous, I've never tried it myself but I imagine there is a way of using asafoetida, or that vegg stuff to make it taste like that.
